Bacon and Egg Fajitas

This yummy dish is great for breakfast or dinner.

Ingredients
  

  • 4 slices bacon
  • 6 eggs
  • 4 flour tortillas
  • 2 Tbsp butter
  • 2 cups sweet bell peppers May use red, orange, yellow, and or green peppers
  • 1/2 cup diced onion
  • 3/4 cup grated cheddar cheese
  • salt, pepper, and Montreal Steak seasoning

Instructions
 

  • Slice bell peppers and dice onions.
  • Fry bacon in large frying pan. Cool on folded paper towels to soak up grease. When cool, crumble.
  • Save half the bacon grease. In remaining bacon grease, fry sliced peppers and diced onion until tender. Sprinkle with salt and Montreal Steak seasoning.
  • While the onions and peppers are frying, heat the reserved bacon grease in medium frying pan. Scramble the six eggs in bacon grease, salt and pepper to taste.
  • Fry flour tortilla in medium buttered fry pan. Fry one side, then flip over and sprinkle half tortilla with 3 Tablespoons cheddar cheese, 1/4 cup onions and peppers, 1 slice crumbled bacon.
  • Add scrambled eggs. Fold tortilla in half. Serve with salsa.
