Cracked Wheat Pancakes
These are our hands down favorite pancakes. We make them every Saturday morning. They would be perfect for a Father's Day breakfast in bed.
Ingredients
- 1-1/4 cup water
- 1 cup whole wheat kernels
- 1/4 cup nonfat dry milk
- 2 Tbsp. butter, melted
- 1 Tbsp. sugar or honey
- 1 Tbsp. baking powder
Instructions
- Whole wheat kernels blended in the blender make these cracked wheat pancakes scrumptious.
- In blender, blend water, wheat kernels, and dry milk on high for 3 minutes. Add egg, butter, sugar, and salt. Blend for 20 seconds. Add baking powder. Pulse 3 times, just enough to mix. Mixture should bubble up making the batter very light.
- Cook immediately on a buttered nonstick griddle
- Serve while hot with butter, maple syrup or fruit jam.
