One of the best things about summer is fresh vine ripe tomatoes. Whether you grow them yourself or purchase them at a farmer’s market, fresh tomatoes make salsa amazing.
Fresh Garden Salsa
Feel free to adjust the ingredients to your taste. Use mild or hot peppers, a little cilantro, or a lot. It is up to you!
Ingredients
- 5 tomatoes
- salt and pepper to taste
- 1/2 Anaheim pepper
- 1 Tablespoon diced onion
- 2 Tablespoons cilantro
- 1/2 lime
- 1/2 cup favorite salsa optional
Instructions
- Peel 5 tomatoes. When the tomato is fully ripe, the tomato skin just peels right off.
- Dice the tomatoes. Salt and pepper to taste.
- Add diced pepper. I use 1/2 Anaheim pepper because I like mild salsa, but you may prefer a hotter pepper. Add 1 Tablespoon diced onions and 2 Tablespoons chopped cilantro.
- Add the juice of 1/2 lime. I like to add 1/2 cup of my favorite salsa, but this is optional.
- And that's it, just stir and ENJOY!
